Serve cool summer salads

Summer salad

2 pkgs. lime gelatin

1 pint vanilla ice cream

1 pkg. cream cheese

1 small can fruit cocktail

Dissolve gelatin in about 2 cups hot water; add remaining ingredients and whip until mix well. Chill.

Carrot salad

2 cups boiling water

1 small pkg. orange gelatin

1 can crushed pineapple

1 cup shredded carrots

Pour boiling water over gelatin in a bowl, stir until gelatin is dissolved, add pineapple and carrots. Pour in a dish or mold and chill.

Among those from Falkville Senior Citizen Center who ate lunch at the KFC in Hartselle recently were Vivian Summerford, Movlyn Robinson, Gail Wallace, Carol Cole, Robert Morris, Judy McClellan and Bobby and Linda Ball. Also going with them were Patsy Clemons, Martha Garrison, Doc Edmonson and the driver, Willie Powell.

Cucumber spread

1-8 oz. pkg.cream cheese

1/2 cup mayonnaise

1 tsp. garlic salt

1 cup cucumbers, chopped with seeds removed

With mixer, blend cream cheese until creamy, add mayonnaise, garlic salt and cucumbers. Serve with crackers.

Fruit spread

1 small can fruit cocktail

1-8 oz. pkg. cream cheese, softened

1/2 cup peanut butter

Drain fruit cocktail and soften cream cheese and peanut butter, blend until smooth. Spread mixture on a slice of bread to make a sandwich.

7-Up float

1 can 7-Up

1 cup strawberry ice cream

1 banana, sliced

Fill a large glass or coffee mug with seven-oneup and strawberry ice cream and sliced bananas and blend until smooth.

Fish dinner

1 box frozen fish fillets, cook according to directions on box.

Hush puppies – cook to directions on box and 1 cup Mexican corn muffin mix and 1/2 cup chopped onion.

Jellied cole slaw

1 pkg. lemon gelatin

1 cup fruit cocktail

3 tablespoons vinegar

2 cups chopped cabbage

Dissolve gelatin in hot water and add vinegar. Pour into a baking dish until set. Cut into squares and serve.

Tartar sauce

1/2 cup mayonnaise

1/2 cup sweet pepper relish

Combine ingredients and mix well. Serve with the fish or use as a dip with crackers. To complete this meal, make tea in a jar according to directions on tea box, place in refrigerator overnight.
